Prawns with Garlic - Gambas al Ajillo

Also known as Gambas Pil Pil, this wondefully simple dish is an absolute staple in any Tapas restaurant. I'm happy to say that it has also made its way home and is now a staple in my own kitchen. Such an easy dish to make and the reward far exceeds the effort required, please try this yourselves!

Ingredients

12 Large Raw Prawns, shell on

3 Cloves of Garlic, finely chopped

100ml Picual Olive Oil (don't be deterred by the amount, its for the sauce!)

3 Dried Cayenne Chillies (any other will suffice also)

Flaked Sea Salt

A large handful of Fresh Parsley, chopped

Crusty Bread, to serve

Directions

1.You may peel the prawns, though this step is optional, if you like to eat the shell then leaving them on will only enhance the flavour! (You can also peel them just before eating too).

2.Put the Olive Oil, Garlic & Chillies into a frying pan and cook on a high heat. Once starting to brown, add the Prawns and sprinkle with Flaky Salt.

3.Once the Prawns have just developed a pink colour, add the parsley and turn off the heat, serve with bread and enjoy!
