My son and I have been experimenting with some of the ingredients available to us and he produced this fabulous quiche out of nowhere the other evening. I managed to get him to write down how he made it and can now share it with you all. Its really simple and has some cheat steps (like using bought pastry) but the end result is something that is wholesome and comforting. And its just as good cold the day after.

Tortilla, or Spanish Omelette, is unique to Spain. It has been served for years, and the recipes have been passed from one generation to the next. This simplest of dishes brings families and friends together, evokes feelings of warmth and comfort and can be served on any occasion at any time of day, whether that be breakfast or an accompaniment to a main meal. This recipe was made for me by a good friend and I absolutely loved it. It's really simple, the trickiest bit being flipping it over half way through without messing it up or dropping it! Give it a go, you won't need any special ingredients but if you want, you can buy ready-prepared Tortilla or a Tortilla mix, simply type TORTILLA in the search bar.

This is one of my son's favourite recipes and he is always asking if I can do it for him - that's quite an accolade from someone who has lived in Italy and loves cooking. Surprisingly, the first time we had it was not in Spain but from a street tapas vendor in Devon when we were at an event with the Shaws Iberian Bar. This recipe has evolved into something that is warming, comforting and delicious but still remarkably easy to prepare and cook. Simmering for an hour longer than the recipe suggests is better but it still tastes great as a quick meal. The morcilla is optional but brings a greater richness to the dish.

Traditional Basque Cod and Chorizo Stew (Bacalao a la Vizcaína)

For many years cod has been a staple fish throughout Europe . But it was in the Basque Country , a place with a strong fishing tradition, where cod a la vizcaína as we know it today began to be prepared. The recipe for Bacalao a la Vizcaína is said to date back to the 18th century , when Basque fishermen began catching large quantities of cod in the cold waters of the North Atlantic. This recipe combines Bacalao (salt cod) and chorizo in a dish that is a delicious combination of saltiness and spice. Great for a family occasion, a quiet supper or just for the fun of it. We've tried it and it is simple to make and tastes just fabulous. Don't forget to pair it with a good white or rose wine.
