Homemade Garlic Mayonnaise - Alioli

Ingredients

1 Egg Yolk

3 Large Garlic Cloves

1/2 tsp Sea Salt

1tsp Fine White Wine Vinegar

200ml Abequina Olive Oil

1.Put the Egg Yolk, Garlic, Salt and Vinegar into a jug/beaker and, using a stick blender, blitz for 10 seconds.

2.Continue to blend. At the same time, slowly begin to pour in the Olive Oil. Once approximately half of the oil has been added, the sauce should start to thicken, once this happens, begin moving the blender up and down to ensure everything is emulsified and smooth.

3.Once all of the Oil has been added, taste for seasoning and serve. Enjoy for up to 3 days in the fridge.
