O-Med are renowned for their early harvest olive oils and usually harvest in late October.
Arbequina olive oil is knowned for its mild, delicate and fruity flavour profile, making it a very approachable, sweet oil often preferred by those new to high-quality extra virgin olive oil. Key notes include ripe banana, fresh apple, green almond, and a subtle peppery or grassy finish
For fish, fruit salads, sauces (mayonnaise or aioli), highly recommended for use in baking (vanilla ice cream and dark chocolate shavings)

At O-Med the entire production process from olive harvesting to bottling is carfefully bconyrolled, because they believe that this is the only way to guarantee the highest quality product. Their extra virgin olive oils are made using the most modern technology.
They are very early harvest oils, rich in aromas and complex flavors. To ensure this, all O-Med oils are preserved with nitrogen to prevent oxidation.
The olive pits are extracted to produce energy, so that the olive mill can operate in a sustainable way.
