Tarta de Santiago -The Greatest Almond Tart

This time at Shaws Iberian, we are focussing on one of our all time favourites. It never ceases the delight us and we have many people asking for it at the bar.
It is of course the fabled Tarta de Santiago - the traditional almond tart that has been baked and enjoyed in Spain since the 1600s. You will not be surprised that it was originally known as Torta Real, or Royal Cake, and was the preserve of the wealthy.
Frankie, one of our regular customers, has shared her enthusiasm for this unique almond tart. She says, 'It's just a really unique taste. I don't think I've ever tasted anything like it. Usually desserts are just ice creams or cakes, or puddings which are nice, but the unique taste of the almond tart is delicious.'
Frankie also recommends pairing it with both cream and ice cream for an indulgent treat.
Made with eggs, ground almonds, and sugar, it's gluten- and lactose-free and as well as cream and ice cream, nothing compliments it better than a chilled glass of dulce Sherry, a good vermouth or even a madeira.
