Segovian Piglet - Rack of Ribs (Frozen)

 This Suckling Pig come from Segovia, traditionally the heart of suckling pig production, to the north of Madrid.  This meat, with the finest texture and flavour, has incomparable flavour and succulence with melt-in-the-mouth crackling.

Suckling pig rack can be roasted, grilled or barbecued. To roast place skin side down in a pre-heated oven 180°C/350°F/Gas Mark 4 for 30mins and then turn so that the rack is skin side up for a further 30mins until the skin is a wonderful, thin crisp.

Available in two sizes, 1.5 - 2 kg, and 2 - 2.5 kg, suitable for 2/3 people or 3/4.
