Salted Whole Anchovies

Rich savoury taste developed through a six-month barrel ageing process. Tender and succulent consistency. Rinse and fillet yourself for the freshest experience.

Every day, Ortiz procures fresh Cantabrian anchovies from auctions along Spain’s northern coast, ensuring they are processed immediately. Once processed, the fish are cured in salt for a period ranging from six to twelve months, with the duration adjusted according to their size.

Once the fish have reached their ideal state, they are packed into tins and immersed in salt, allowing you to fillet them at home.

Store at a temperature between 5°C and 15°C. After opening, refrigerate below 8°C, ensuring the contents are submerged in olive oil, and use within 14 days.
