A truely exceptional and most fabulous soft creamy goats cheese and has a wonderful texture with a slightly creamy and buttery flavour with floral notes reflective of the goats’ diet. It presents a whitish colour and when cut shows a vein of ash.
Olavidia cheese is handmade from slow-pasteurized goats milk. It is the oldest form of fermentation being natural and it is matured with moulds that incorporate charcoal. It is a good looking cheese to compliment any cheese board due to its crust and a line of edible ash that crosses through the centre of the cheese. Aged for fifteen to twenty days. It is a cheese of intense flavour, where dairy flavours predominate with some notes of white almon
In the first few days after leaving the cheese factory, it is a compact cheese with notes of cream, yogurt, and fresh curd, but as it evolves, it becomes a creamier cheese, to the point that it becomes practically liquid, starting from the rind to the center, achieving much more complex nuances.
In 2021 Olividia was crowned the Best Cheese in the World at the world cheese awards, having taken silver the year before, highlighting the exceptional nature of this unique artisanal product
Keep refrigerated. Please note that this is a soft cheese that has a best before date measured in days. Nevertheless, the cheese continues to mature and evolve, developing different unique characteristics as it does so.
