Gonzalez Byass Tio Pepe Fino En Rama

Fino (‘refined’ in Spanish) is the driest and palest of the traditional varieties of sherry. Ageing in the barrel is under the flor (yeast sitting on the surface of the wine) allows little oxidation to take place.

En Rama is Fino in its purest form – unfiltered, unclarified and drawn from the middle of the cask when the flor is at its most active. It is bottled and shipped within just a few days.

A very fresh , light and fruity wine with a slight cloudiness. Can be drunk throughout the day but is a particularly good accompaniment to Bellota ham or fish.

Gonzalez Byass Leonor Palo Cortado

Due to its mysterious ageing process it could be described as similar to an Amontillado on the nose and similar to an Oloroso on the palate. Aged for over 12 years Leonor shows a light mahogany colour with golden tones and slightly orange rim. On the nose intense and complex with typical Amontillado notes such as hazelnuts perfectly balanced with other aromas such as bitter orange and mature oak. On the palate powerful and intense with toasted notes yet smooth and silky.

Due to its power and structure this Palo Cortado is perfect with hard cheese, salty caramel, strong meats such as venison and dry aged beef. Gonzalez Byass Leonor Palo Cortado should be served between 10 and 12 ºC.

Arturo Sánchez Jamón Ibérico de Bellota 50g

Jamon Ibérico de Bellota is a true gastronomic jewel, because each piece is unique: the union of the best raw material, the pure breed pig raised in the best dehesa fields, and the natural curing in our cellars in Guijuelo.

Time is of essence on a product like this: two years of living in freedom, in the dehesa fields, with two seasons to guarantee a double acorn-based feed and its healthy nutritional properties; then, a minimum of 48 months’ curing in Guijuelo, in natural drying sheds, where the cold, dry wind of the Béjar and Gredos mountains do the rest.

Arturo Sánchez Chorizo Ibérico de Bellota 50g

Made from acorn-fed, free-range pork blended with smoked paprika and garlic, this chorizo is aged for a minimum of 4 months in the mountain air of Guijuelo in Salamanca. Enjoy thin slices of this delectable sausage with a glass of fine Spanish wine. The rich and flavourful chorizo will literally melt in your mouth!

Vega Mancha Cured Manchego Cheese D.O.P

Aged for 12 months, this Cured Manchego Vega Mancha has an intense nutty flavour with hints of caramel and fruit. Its has a hard, dense paste that comes from the ageing with a dry’ish texture and a complex, savoury finish. This cheese has the ‘Queso Manchego D.O.’ seal of authenticity, attesting to its high quality and provenance.

Salanort Boquerones in Vinegar

What is the difference between boquerones and anchovies? Boquerones and anchovies are the same type of fish, the difference is that anchovies are heavily salted and boquerones are not. All boquerones are flash frozen soon after they are caught, to keep them at optimum freshness, then thawed and prepared. They are then chilled and packaged so that they arrive to you with pristine condition.

Freshly caught from the Cantabrico Sea and filleted by hand, these anchovies are marinated in extra virgin olive oil and white wine vinegar. The vinegar immediately pickles them, sealing in their fresh taste. Olive oil is added to introduce a smooth, silky flavour. They are not salty and have a much milder taste than traditional anchovies.

Boquerones are incredibly tasty, just serve them on crusty bread with piquillo peppers or alone with chopped garlic and parsley. Add them to salads or simply skewer them with a pickled guindilla and an olive and serve to guests as a tasty tapa. Boquerones are the perfect pairing to a cold beer.

Large Spicy Gordal Olives

Ideal served as tapas, these pitted Gordal Olives are marinaded in brine with a hint of heat. What makes Gordal Olives so special is their firm, fleshy and crunchy texture and have been carefully selected from special harvests. These olives are pitted which makes them a lovely crunchy, savoury mouthful. You can add your own dressings or chop into salads and sauces.

Mallorcan Rosemary Cheese Biscuits

A traditional product from Mallorca Galletes Marineras or Sailors Biscuits are an artisan biscuit which in the old days, seamen would take with them on their long trips around the Mediterranean Sea.
