With its smooth, velvety texture, this hand-trimmed Ortiz white tuna is typically smaller, weighing under 20kg. Caught on rod and line in the Bay of Biscay and carefully prepared by hand, its light-coloured flesh boasts a subtle flavour.
After opening, store in a non-metallic container, fully covered in its sauce, and refrigerate below 8°C. Consume within three days.
