Description
Our Zamorano is an aged sheep's milk cheese produced by Lácteas Zamoro using select raw sheep's milk and following a traditional recipe. The milk is thermized, not pasteurized, to preserve all its natural properties and not change the flavours of the raw milk
Using natural rennet, we coagulate the milk. The curd is then transferred to the filling machine and placed into molds. These are then placed in the pressing area to extract the excess whey. Once the pressing time is over, the cheese is unmolded and placed in brine.
This process yields a natural, artificial-free rind that develops its characteristic color during the eleven (11) month maturation process.
The result is a unique, healthy, and natural product, similar to Manchego but with a richer, nuttier, buttery flavor and smoother texture that will delight your senses.
