Red Tuna Loin Cooked in Oil
It is one of the leanest and cleanest parts of the bluefin tuna. It has a delicate flavour and juicy texture to enjoy at your leisure and with a glass of good wine.
The red tuna loin is the most commonly used part due to its size and cleanliness. There is the black loin, named for its color and located in the upper part of the tuna next to the dorsal fin, and the white loin, located in the lower part next to the belly.
It has a low fat content. The only ingredients added to the red tuna loin are olive oil and sea salt, resulting in a product of incredible quality. It has a characteristic and delicate flavour, and a juicy texture.
In 1986, the Pacheco brothers established Herpac, drawing on their extensive experience running a fish shop in the coastal town of Barbate.
Their dedication and hard-earned reputation led Francisco and Diego to expand their venture by producing dried tuna. They dried the tuna manually using traditional methods, relying solely on the sun and wind.
Herpac now operates an 8,500 square meter facility, three shops and exports globally.
